Trisodium citrate, the sodium salt of citric acid, used as a buffer and acidity regulator in soft drinks, energy and electrolyte drinks, flavoured milk, jellies and processed cheese, where it works as an emulsifying salt. It rounds off the sourness of citric acid and stops milk proteins from curdling. FSSAI Appendix A permits it at GMP in most processed foods.
