Lecithin (INS 322)
5+ suppliers
Natural emulsifier recovered while refining soya or sunflower oil. Used in chocolate and compound coatings to lower viscosity, in biscuits, bread and cakes to improve dough handling and release, in instant powders to help wetting, and in pan release sprays. Liquid lecithin is the usual bulk form; de-oiled powder suits dry mixes. FSSAI Appendix A permits it at GMP; typical use 0.1 to 1%.
