5+ suppliers
Edible gelatin made by partial hydrolysis of collagen from bovine bone or hide, pig skin or fish, used to set jellies, panna cotta, cheesecakes, mousses, marshmallows and gummies and to stabilise yogurt and ice cream. Gel strength is sold by bloom: about 180 to 200 bloom for desserts, 220 to 260 for gummies and firm sets. It has its own FSSAI standard (2.11.3) instead of an INS number and must be labelled non-vegetarian.
