Erythrosine (INS 127)

Water soluble synthetic xanthene dye giving a cherry pink to red, used in candied cherries, sugar confectionery, decorations and some bakery items. It precipitates in acidic products, so it suits neutral foods. FSSAI permits it only in the categories listed in Appendix A with low limits because of its low ADI (0 to 0.1 mg/kg body weight), so check the category before use.
