Food grade citric acid made by fermentation, the most used acidulant in India for soft drinks, squashes, jams, candies, pickles, sauces and instant mixes; it also boosts fruit flavour and acts as a chelating agent. Monohydrate is the everyday grade, while anhydrous is preferred in dry mixes and tablets because it cakes less. FSSAI Appendix A permits it at GMP in most processed foods; typical use 0.1 to 1%.
