Chlorophyll and copper chlorophyllin (INS 140, 141)

Natural green colours from plant chlorophyll. Copper chlorophyllin (sodium salt, water soluble) is far more stable to heat and light than plain chlorophyll, so it is the usual choice for mint sweets, paan and pista flavoured products, jellies, sauces and bakery. Oil soluble copper chlorophyll suits fats and coatings. Chlorophyll is on the FSSAI permitted natural colour list; check Appendix A for the copper complexes in your food category.
