Caramel colour (INS 150a to 150d)

Brown colour made by controlled heating of food grade sugars, with or without ammonium or sulphite compounds, giving light tan to near black shades. Used in colas, whisky and rum, beer, soy sauce, gravies, bakery and confectionery. FSSAI permits caramel classes in the Appendix A categories, many at GMP. Choose the class by charge and stability needed: class III suits beer and sauces, class IV suits acidic soft drinks.
