Carotenoid colour giving yellow to orange shades, also a provitamin A. Cold water soluble powders suit beverages, dairy drinks and dry mixes; oil suspensions suit margarine, fats, cheese and bakery. FSSAI lists beta carotene, synthetic or from vegetable sources, among permitted colours, mostly at GMP or the levels in Appendix A. It is sensitive to oxygen and light.
