Ammonium bicarbonate, known as biscuit ammonia or baker's ammonia, is a raising agent for thin, crisp, low moisture bakes such as biscuits, crackers, nankhatai and cookies; it breaks down fully into gases in the oven, which is why it suits only products dry enough for the ammonia to escape. Usually used together with baking soda. FSSAI Appendix A permits it at GMP.
