Water insoluble pigments made by fixing a permitted synthetic dye onto alumina, used where colour must not bleed: tablet and candy coatings, chewing gum, dry beverage and cake mixes, fat based fillings and seasonings. FSSAI sets a standard for the sunset yellow lake (17% min pure dye) and lake use is limited to the categories and levels in Appendix A, so confirm the lake and food category before buying. Only lakes of FSSAI permitted dyes are listed.
